Greta's Goodies: Great Gluten-Free Granola

Throughout 2021, she’s going to be sharing some of her favorite recipes, country-inspired crafts and more. This month, it’s a super-simple granola recipe that you can easily adjust for your own needs and taste.
Adjust the Recipe for You
While there is a recipe, Greta has designed many of hers to be adjustable (just in case you’re out of an ingredient or you just don’t like something). If you don’t like coconut, leave it out or substitute ground nuts or dried fruits, such as blueberries, cranberries, cherries, or banana chips. Want to skip the honey? Try molasses, coconut nectar agave, or maple syrup. Even cinnamon can be replaced with cardamon, ginger, cloves and pumpkin spice. It’s totally up to you.
Ingredients
- 4 cups oats
- ½ cups oat bran
- ¾ cup honey
- ½ cup coconut (shredded)
- ½ cup nuts of your choice (crushed)
- ½ cup vegetable oil
- ½ cup water
- ½ teaspoon cinnamon
- ½ tablespoon vanilla
- 1 ½ teaspoons maple flavoring
Directions:
Pre-heat oven to 300º.Combine the oats, bran, cinnamon, coconut, and crushed nuts.
Mix in the honey, oil, water, vanilla, and maple flavoring. Mix well.
Pour onto a baking sheet (make sure it has sides to avoid granola falling off).
Put the mixture in the oven for 1 hour, stirring every 15 minutes.
Remove and allow to cool.
Granola Makes a Great Topping
This granola recipe is perfect as an ice cream topper, yogurt companion, or simply add milk, bananas, or other fruit for an anytime snack.
